Merlot and Pinotage grapes came from North East and West facing slopes.
Various noble red varieties were used to make this wine. The grapes were hand harvested early in the morning. The juice was in contact with the skins for a limited period of time to extract colour and flavour. The juice was clarified and inoculated with specific yeast strains to promote berry like flavours. The wine fermented between 14°C and 17°C until dryness. Maturation took place on the lees for 2 months. After 2 months the wine was stabilized and bottled.
Light pink in colour with flavours of strawberries, raspberries and floral aromas. The wine is elegant on the palate supported by a creaminess that ensures a lingering berry like aftertaste. This wine will compliment salads and cold seafood dishes.
