A PASSION FOR PERFECTION
This wine consists of only one cultivar, Chenin Blanc. The grapes were handpicked and grapes were selected out of our best block of Viognier. The grapes came in at 23 Balling, were destemmed and pressed. The juice was inoculated with a yeast strain and fermentation took place in oak barrels for a period of 17 days at a temperature of 16 Celsius. After fermentation, the wine was transferred to new French oak barrels for a period of 5 months. After maturation, the wine was prepared for bottling.
Cellar Master Comment:
This barrel-fermented Chenin Blanc is full of tropical fruit. Pawpaw and citrus flavours are prominent with some caramel tones from the wood. Maturation took place in barrels on its fine lease for 5 months, which give it a rounded mouthfeel and leaves you with a taste that lingers in the mouth. Maturation potential 3-5 years.
