The grapes come from vineyards planted at 185 to 210 meters above sea level in decomposed granite soil. The vines were trellised and were planted from 1990 to 1991.
Specific blocks were hand harvested (Malbec) on the 12th of March 2013 with sugar levels of 24.5°B. A specific Merlot block was harvested on the 13th of March 2013 at sugar levels of 25°B. The grapes were destemmed and cold soaked for 48 hours. After 48 hours the pulp was inoculated with selected yeast strains and fermentation took place at 25°C. The wine was pressed at 3°B. MLF (malolactic fermentation) took place in stainless steel tanks. Maturation took place in 100% French oak barrels for 24 months. After maturation barrels were hand selected and blended to ensure the desired flavour profile was achieved. The wine was then stabilized and bottled.
A complex wine with flavours of mulberry, mint and cedar wood. On the palate the wine is soft yet complex with good structure, ensuring a memorable fruit driven aftertaste. This wine will compliment stews and meaty pastas.
Maturation potential 5-8 years.
