The grapes come from vineyards planted at 185 to 210 meters above sea level in decomposed granite soil. The vines were trellised and were planted from 1990 to 1991.
Specific blocks were hand harvested on the 18th of March 2012 with sugar levels of 24.5°B. The grapes were destemmed and cold soaked for 48 hours. After 48 hours the pulp was inoculated with selected yeast strains and fermentation took place at 25°C. The wine was pressed at 3°B. MLF (malolactic fermentation) took place in stainless steel tanks. Maturation took place in 100% French oak barrels for 24 months. After maturation barrels were hand selected and blended to ensure the desired flavour profile was achieved. The wine was then stabilized and bottled.
The wine is dark red in colour with floral, mulberry and plummy flavours on the nose. On the palate the wine is full with soft integrated tannins ensuring for a long lingering berry like aftertaste. This wine will compliment red meat and rich pastas.
