The winemaking

Merlot: Selected blocks were hand harvested in the second week of March 2014 with sugar levels between 24.5°B and 25°B. The grapes were destemmed and cold soaked for 24 hours. After 24 hours the pulp was inoculated with selected yeast strains and fermentation took place at 25°C. The wine was pressed at 3°B. MLF (malolactic fermentation) took place in stainless steel tanks and the wine was aged with new French oak (medium toasted) in tank for 4 months. Thereafter the wine was aged in older French oak barrels for 12 months. Cabernet Sauvingon: Different blocks were hand harvested during the third week of March 2014 at sugar levels between 24.8°B and 25°B. The grapes were destemmed and cold soaked for 48 hours. After 48 hours the pulp was inoculated with selected yeast strains and fermentation took place at 27°C. The wine was pressed at 3°B. MLF (malolactic fermentation) took place in stainless steel tanks and the wine was aged with new French oak (medium plus) in tank for 7 months. Thereafter the wine was aged in older French oak barrels for 9 months.

Winemaker’s Comments

A full bodied wine with upfront flavours of ripe blackberry and plum. Well balanced, smooth finish and lingering aftertaste. Serve slightly chilled as a perfect accompaniment to any dish.
