2014 Merlot / Cabernet Sauvignon
Laakuopoule is created by Fort Simon Wine estate, burrowed deep within the luscious Hills of Bottelary in Stellenbosch, South Africa. The Bottelary Hills is home to the best terroir Stellenbosch has to offer, ensuring a classic, smooth drinking wine.
The grapes came from vineyards planted at 185 to 210 meters above sea level in decomposed granite soil. The trellised vines were planted from 1990 to 1991.
Selected blocks were hand harvested in the second week of March with sugar levels between 24ºB. The grapes were destemmed and cold soaked for 48 hours. The pulp was inoculated with selected yeast strains and fermentation took place at 25ºC. The wine was pressed at 3ºB. Malolactic fermentation took place in stainless steel tanks and was aged with French oak barrels for 18 months.
