A PASSION FOR PERFECTION
This wine consists of one cultivar, Pinotage The grapes were handpicked and grapes were selected out of various blocks of Pinotage. The grapes came in at a 25 Balling, were destemmed and cold maturation lasted 48 hours. After cold maturation, the pulp was inoculated with a yeast strain and fermentation took place for a period of 16 days at a temperature of 24 – 25 C. During this period pump overs were done 4 times a day. The juice was pressed once fermentation was finished.The wine matured in 100% French oak barrels for a period of 24 months. Thereafter it was bottled.
Cellar Master Comment:
The wine s dark red in colour. Flavours of cherries, plums, strawberries and dark chocolate are prominent on the nose. On the palate, the wine is well rounded with integrated tannins for a full-bodied wine that lingers of red and dark fruit. Maturation potential: 8 – 10 years.
