The vineyards

The grapes came from vineyards planted at 185 to 210 meters above sea level in decomposed granite soil. The trellised vines were planted from 1990 to 1991.

The winemaking

Merlot: Selected blocks were hand harvested in the second week of March 2013 with sugar levels between 24.5°B and 25°B. The grapes were destemmed and cold soaked for 48 hours. After 48 hours the pulp was inoculated with selected yeast strains and fermentation took place at 25°C. The wine was pressed at 3°B. Malolactic fermentation took place in stainless steel tanks and the wine was aged with new French oak (medium toasted) in tank for 6 months. Thereafter the wine was aged in older French oak barrels for 12 months. Cabernet Sauvignon: Different blocks were hand harvested during the first week of 2012 at sugar levels between 24.8°B and 25°B. The grapes were destemmed and cold soaked for 48 hours. After 48 hours the pulp was inoculated with selected yeast strains and fermentation took place at 27°C. The wine was pressed at 3°B. Malolactic fermentation took place in stainless steel tanks and the wine was aged with new French oak (medium plus) in tank for 9 months. Thereafter the wine was aged in older French oak barrels for 9 months.

Winemaker’s Comments

The wine is deep dark in colour with flavours of black current, plums and a hit of smokiness. On the palate the wine is medium to full bodied with soft tannins leading to a fruit driven aftertaste.
